Jerusalem Artichoke aka Sun-choke x5 Tubers
Jerusalem Artichokes (Helianthus tuberosus) produce edible tubers that taste like a cross between a potato and apple. Tubers can be dug as needed during fall/winter months and make a great healthy alternative to a potato. They can be eaten fresh or cooked in soups and stews. 5 tubers will come in a soil mix with at least 3 “eyes” per tuber. Plant soon after receiving for best results. They can go directly in the ground, or in a pot. Ideal planting depth is 2-4”. They are hardy and will grow in most conditions but can become invasive, so only plant where you Tubers aren’t worried about them coming back year after year. This type gets about 5’ tall, and bloom from mid-summer until the first frost with showy yellow sunflower like blooms which make a lovely flower arrangement.
